Chicken salad

Fresh, genuine and colorful tasty chicken salad. Perfect as a snack for lunch break or to be served at a dinner with friends. Grilled chicken breasts and raw vegetable, to be varied according to your personal taste and the availability of the season.

Ingredients for 4 people
Chicken breast fillets 600g
Pitted black olives 30g
Cherry tomatoes 50g
Cherry tomatoes in extra virgin olive oil 50g
Green salad 200g
Feta cheese (diced) 100g
2 tablespoons of extra virgin olive oil (recommended Cerasuola PGI Sicily)
Salt and pepper to taste

(1) Cook the chicken fillets on a hot grill making sure the meat is completely white and has the typical streaks of the grill. Repeat for the other side of the chicken fillet. It will take about five minutes but the time can vary depending on the thickness.

(2) When the chicken is well cooked, remove it from the grill and season it immediately with salt and pepper, so the heat will melt them. Place the chicken slices on a plate and leave to cool.

(3) In the meantime dice the feta cheese and the fresh cherry tomatoes and put them in a bowl together with the chicken, salad leaves, cherry tomatoes in oil and black olives. Add the  extra virgin olive oil and mix properly.

(4) Cover the bowl with plastic wrap and let it rest in the refrigerator for at least an hour.
After this time the flavors will be well mixed and you can enjoy your tasty chicken salad.
