Pancake with Sicilian orange spread

Time to get creative with a fusion recipe that merges a traditional national feast with traditional Mediterranean flavours.
Celebrate pancake day with a tasty and easy recipe, ideal to any cooking skill

100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
Sicilian orange spread
Orange wedges and blueberries to serve (optional)


(1)  Add 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter.

(2) Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper.

(3) When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.

(4) Serve your pancakes with Sicilian orange spread, decorate with orange wedges and blueberries to give a variety of colours on your plate.
